greek yoghurt muffins (v)

looking for a low sugar cake? you got it! with only 142kcal per muffin, this recipe will go down a treat for those of you who may not have the biggest sweet tooth - i think they also make a perfect breakfast muffin!


ingredients (makes 15)

300g self raising flour

0.5tsp baking powder

0.5tsp bicarbonate soda 

60g coconut sugar (add more if you prefer a sweeter taste)

1tbsp agave nectar


100ml oil (olive or canola)

2 eggs

60ml milk

1tsp vanilla extract



- preheat the oven to gas mark 4.

- mix the wet ingredients and dry ingredients.

- pour the mixture into each cake tin.

- bake for 20mins.
